Good-tasting water

Generally speaking, Japan has a high annual precipitation. Therefore, Japan is quite verdant. By virtue of these blessings bestowed by nature, Japan has rich water flowing beneath the surface of the earth.

Fukui is no exception. It has rich water resources, which come ultimately from the high mountains at Oku-Etsu area [the deep eastern part of Fukui]. In the northern part of Fukui, three big rivers join together. THese rivers provide a stable water supply to the whole areas of Fukui.

Fukui city is located between the mountains dividing between Fukui, Ishikawa, Gifu. Its population is about a half million. Fukui has some snow in winter, but it is a good resources of water during spiring, summer, and fall. This meltwater tastes really good. In fact, the Japanese environment ministry chose the water in Fukui as one of the 100 best waters in Japan. It is thus quite natural that the sake brewed in Fukui has enjoyed a good reputation. Of course, the qualities of rices and vegetables in Fukui are excellent, too. In the sea off the coast of Fukui, there is a converging point of warm and cold currents, which abounds with fish. The people of Fukui are proud of these fruits of the sea.

Water is the most important element of the food chain. A viable area is the area with good water. We are grateful that Fukui is such a blessed city.
